Honey-Ginger Syrup

A warming honey syrup infused with fresh ginger — great in margaritas, gimlets, and hot toddies.

Instructions

In a small saucepan, combine honey (or organic cane sugar) and water over medium-high heat and bring to a boil.

Reduce the heat, add fresh ginger (peeled and sliced into rounds), and simmer for 20 minutes, stirring occasionally.

Remove from the heat and let steep another 20 minutes.

Strain out the ginger and transfer the syrup to an airtight container. Refrigerate for up to 1 month.
