Carrot Syrup

A sweet, earthy syrup of fresh carrots, pineapple juice, ginger, and sugar, used in the Mother Knows Best cocktail.

Instructions

Peel and chop carrots.

Peel and grate fresh ginger. Stir together with unsweetened pineapple juice.

In a blender, combine carrots, and pineapple-juice/ginger mixture. Blend until smooth then strain the mixture through a fine mesh strainer to remove the pulp.

In a small saucepan, add sugar and the strained carrot juice. Stir over medium heat until sugar has completely dissolved. Bring the mixture to a low boil, reduce heat, and let simmer on low heat for 5 minutes.

Remove mixture from heat and let cool completely. Strain the syrup into a clean glass container one last time.
