Quick Pickled Onions

Bright, tangy pickled red onions that come together in minutes and keep in the fridge for a week. Perfect on tacos, salads, grain bowls, and sandwiches.

Instructions

Place red onion (thinly sliced) in a jar or cup.

In a bowl, whisk together warm water, sugar, and coarse salt until dissolved. Stir in apple cider vinegar.

Pour the brine over the onions and let sit at room temperature for 30-60 minutes.

Seal and refrigerate. They’ll keep for up to one week.
